Ingredients

12 ounces cheese tortellini (fresh or frozen)

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup fresh spinach, roughly chopped

1 cup grated Parmesan cheese

Salt and black pepper, to taste

1/2 teaspoon red pepper flakes (optional)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.

Make the Cream Sauce: Add the heavy cream to the skillet, stirring well to combine with the sautéed garlic. Reduce the heat to low and let it simmer for about 3-4 minutes until it begins to thicken.

Incorporate Spinach: Stir in the chopped spinach, grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Continue to stir until the spinach wilts and the cheese melts, creating a creamy sauce.

Combine Tortellini and Sauce: Add the drained tortellini to the skillet. Gently toss to coat the tortellini in the creamy garlic sauce. Let it cook together for another 1-2 minutes, allowing the flavors to meld.

Serve: Remove from heat and garnish with fresh parsley. Serve hot, with extra Parmesan cheese on the side if desired.
