8 oz (225 g) spaghetti or fettuccine

2 tablespoons olive oil

4 cloves garlic, minced

5 cups fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon crushed red pepper flakes (optional)

Freshly ground black pepper, to taste

Zest of 1 lemon

Juice of 1/2 lemon

1/4 cup chopped fresh basil (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add the Spinach: Gradually add the chopped spinach to the skillet. Cook, stirring frequently, until wilted and tender, roughly 3-4 minutes.

        Make the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Allow the cream to simmer gently for 2-3 minutes.

          Combine: Stir in the grated Parmesan cheese, salt, crushed red pepper flakes (if using), lemon zest, and lemon juice. Mix until the cheese has melted and the sauce is smooth.

            Mix in the Pasta: Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

              Season to Taste: Adjust seasoning with freshly ground black pepper and more salt if needed.
