1 lb (450g) store-bought potato gnocchi

2 tablespoons olive oil

4 cloves garlic, minced

6 cups fresh spinach (about 6 oz)

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

Salt and black pepper, to taste

1/4 teaspoon nutmeg (optional)

1 tablespoon lemon juice (for brightness)

Fresh basil or parsley, chopped (for garnish)

Instructions
 

Cook Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

      Add Spinach: Add the fresh spinach to the skillet, stirring occasionally until wilted, about 2-3 minutes. If using a large amount of spinach, you may need to add it in batches to fit everything in the skillet.

        Combine Cream and Parmesan: Pour in the heavy cream and bring the mixture to a gentle simmer over low heat. Stir in the grated Parmesan cheese, allowing it to melt and create a creamy sauce. Season with salt, black pepper, and nutmeg if using. Add lemon juice to enhance the flavor.

          Add Gnocchi: Gently fold the cooked gnocchi into the creamy spinach sauce, allowing the gnocchi to soak up some of the sauce. Cook for another 2-3 minutes, allowing everything to warm through and the flavors to meld.
