1 medium head of cauliflower, cut into florets

4 cloves garlic, minced

1/2 cup cream cheese, softened

1/4 cup unsweetened almond milk (or regular milk)

2 tablespoons unsalted butter

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 cup grated Parmesan cheese

Fresh chives or parsley, chopped, for garnish

Instructions
 

Steam the Cauliflower: In a large pot, bring about an inch of water to a boil and place a steamer basket over it. Add the cauliflower florets and steam for 10-12 minutes, or until very tender. Alternatively, you can microwave them in a covered dish with a little water for about 8 minutes, ensuring they are fork-tender.

    Sauté the Garlic: In a small skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

      Blend the Ingredients: Transfer the steamed cauliflower to a food processor. Add the sautéed garlic and butter mixture, cream cheese, almond milk, salt, pepper, garlic powder, and Parmesan cheese.

        Process Until Smooth: Blend the mixture until it reaches a creamy, smooth consistency. You may need to scrape down the sides a few times to ensure everything is incorporated well.

          Adjust the Consistency: If the mashed cauliflower is too thick, add more almond milk, a tablespoon at a time, until the desired creaminess is achieved.
