Creamy Garlic Herb Chicken Thighs

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

Salt and pepper, to taste

6 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes, or until the skin is crispy and golden. Flip the thighs and cook for another 5 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Garlic: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute, until fragrant, taking care not to burn it.

        Make the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Allow it to simmer for about 2 minutes. Then, reduce the heat to low and add the heavy cream, thyme, rosemary, and oregano. Stir to combine and let simmer for another 3-4 minutes until the sauce begins to thicken slightly.

          Return the Chicken: Add the seared chicken thighs back to the skillet, skin-side up. Spoon some of the sauce over the chicken. Cover with a lid and let it simmer on low heat for about 20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/75°C).

            Garnish and Serve: Once done, remove the lid and sprinkle with fresh parsley. Serve the chicken thighs with the creamy garlic herb sauce over rice, mashed potatoes, or your favorite pasta.
