Creamy Garlic Chicken and Spinach Skillet

1 lb (450g) boneless, skinless chicken breasts, sliced into strips

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

2 cups fresh spinach, roughly chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken strips with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Make the Cream Sauce: Pour in the chicken broth, and scrape the bottom of the pan to release any browned bits. Bring to a simmer, then reduce the heat to low and add the heavy cream and Italian seasoning. Stir well to combine.

        Add Spinach: Gradually add the chopped spinach to the skillet, stirring until it wilts down, about 2-3 minutes. If you like a little heat, add the red pepper flakes at this stage.
