Creamy Garlic Butter Chicken with Rotini

1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

8 oz rotini pasta

4 tbsp unsalted butter

4 cloves garlic (minced)

1 medium onion (finely chopped)

1 cup heavy cream

½ cup chicken broth

1 tsp dried oregano

1 tsp paprika

Salt and pepper (to taste)

1 cup fresh spinach (roughly chopped)

½ cup grated Parmesan cheese

Fresh parsley (chopped, for garnish)

Instructions
 

Cook the Rotini: In a large pot of boiling salted water, cook the rotini according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Season the chicken pieces with salt, pepper, paprika, and oregano. Add the chicken to the skillet and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the chopped onion and sauté until translucent, about 3-4 minutes. Then, add the minced garlic and sauté for another 1-2 minutes, stirring constantly to prevent burning.

        Combine Cream and Broth: Pour in the chicken broth and heavy cream, stirring well to combine. Bring the mixture to a simmer, allowing it to thicken slightly (about 3-5 minutes).

          Add the Chicken and Spinach: Return the cooked chicken to the skillet and stir in the fresh spinach. Cook for an additional 2-3 minutes, or until the spinach has wilted.

            Mix with Pasta: Add the cooked rotini to the skillet, tossing gently to coat the pasta with the creamy garlic butter sauce. Stir in the grated Parmesan cheese until fully melted and incorporated. Adjust seasoning with more salt and pepper if needed.
