4 bone-in, skin-on chicken thighs

Salt and black pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter, divided

6 cloves garlic, minced

1 teaspoon dried thyme (or 2 teaspoons fresh thyme)

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Season the Chicken: Pat the chicken thighs dry with paper towels. Season generously with salt and black pepper on both sides.

      Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip them over and cook for an additional 3-4 minutes. Remove the chicken from the skillet and set it aside.

        Prepare the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add 2 tablespoons of butter. Once melted, add the minced garlic and thyme. Sauté for about 1-2 minutes, until the garlic is fragrant (be careful not to burn it).

          Create the Creamy Base: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream and Dijon mustard, mixing well until combined. Allow the sauce to simmer for about 3-4 minutes until slightly reduced.

            Add Cheese: Slowly whisk in the grated Parmesan cheese, allowing it to melt into the sauce. Taste and adjust seasoning with salt and pepper as needed.
