4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup milk

3 tablespoons unsalted butter

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese (optional, for serving)

4 green onions, chopped (for garnish)

Croutons (for garnish)

Instructions
 

In a large pot, melt the butter over medium heat. Once melted, add the chopped onions and garlic. Sauté for about 5 minutes, until the onions are translucent.

    Add the diced potatoes to the pot and stir to combine with the onion and garlic mixture. Cook for an additional 5 minutes.

      Pour in the vegetable or chicken broth and add thyme, salt, and pepper. Increase the heat to high, bringing the mixture to a boil, then reduce to low and cover. Let simmer for about 20-25 minutes or until the potatoes are tender.

        Once the potatoes are cooked, use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest as is.

          Stir in the heavy cream and milk, mixing well until fully incorporated. Heat the soup gently over low heat until warmed through. Adjust seasoning if necessary.

            Serve hot, garnished with shredded cheddar cheese, chopped green onions, and croutons for added texture.
