8 oz (about 2 cups) fusilli pasta

1 large cucumber, diced

1 cup cherry tomatoes, halved

1 cup sweet corn (fresh, canned, or frozen and thawed)

1/2 red onion, finely diced

1/2 cup plain Greek yogurt

1/2 cup mayo (or vegan mayo for a plant-based version)

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 clove garlic, minced

1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)

Salt and pepper to taste

Optional: 1/4 cup feta cheese, crumbled (or a plant-based cheese)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process. Set aside to cool completely.
