Ingredients

2 large English cucumbers, thinly sliced

1 cup plain Greek yogurt

2 tablespoons mayonnaise

2 tablespoons fresh dill, chopped (more for garnish)

1 tablespoon lemon juice

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup red onion, thinly sliced (optional)

1 tablespoon apple cider vinegar

1 tablespoon olive oil

Instructions

Prepare Cucumbers: Place the thinly sliced cucumbers in a colander and sprinkle with a generous pinch of salt. Let them sit for about 15-20 minutes to draw out excess moisture. Afterward, rinse the cucumber slices under cold water and pat them dry with paper towels.

Make the Dressing: In a large mixing bowl, combine the Greek yogurt, mayonnaise, chopped dill, lemon juice, garlic powder, onion powder, apple cider vinegar, olive oil, and a pinch of salt and pepper. Whisk together until smooth.

Combine Ingredients: Once the cucumbers are dry, add them to the bowl with the dressing. If using, add the sliced red onion as well. Gently toss everything together until the cucumbers are well-coated in the creamy dressing.

Chill: Cover the salad with plastic wrap or transfer it to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld.

Serve: Before serving, give the salad a gentle stir and adjust seasoning with additional salt and pepper if needed. Garnish with extra chopped dill for a fresh touch!
