8 oz (225g) pasta of your choice (fettuccine or penne works well)

2 cups fresh or frozen corn kernels

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup vegetable or chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon dried thyme

Salt and black pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta cooking water.

    Sauté the Aromatics: In a large skillet over medium heat, heat the olive oil and butter. Add the chopped onion and cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the Corn: Add the corn kernels to the skillet and sauté for about 5 minutes, until they're slightly caramelized and tender. Season with dried thyme, salt, and black pepper.

        Create the Sauce: Pour in the vegetable or chicken broth and bring it to a gentle simmer. Let it cook for about 3-4 minutes to combine the flavors. Reduce the heat and stir in the heavy cream, allowing it to heat through without boiling.
