Creamy Cilantro Lime Pasta

12 oz fettuccine or linguine pasta

1 cup fresh cilantro leaves, loosely packed

½ cup heavy cream

½ cup freshly grated Parmesan cheese

2 cloves garlic, minced

Zest of 1 lime

1 tablespoon lime juice (more to taste)

1 tablespoon olive oil

1 teaspoon salt (or to taste)

½ teaspoon black pepper

Pinch of red pepper flakes (optional for heat)

Extra cilantro leaves for garnish

Lime wedges for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine (or linguine) and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Cream Sauce: In a blender or food processor, combine the fresh cilantro leaves, heavy cream, Parmesan cheese, garlic, lime zest, lime juice, olive oil, salt, black pepper, and red pepper flakes (if using). Blend until smooth and creamy. Taste and adjust lime juice and seasoning as needed.

      Combine Pasta and Sauce: In the same pot used for the pasta, return the drained pasta and pour the creamy cilantro sauce over it. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.

        Heat Through: Toss the pasta in the sauce over low heat for about 1-2 minutes until everything is well coated and heated through.

          Serve: Plate the creamy cilantro lime pasta and garnish with extra cilantro leaves. Serve with lime wedges on the side for an added burst of flavor.
