1 pound chorizo sausage, casings removed

1 medium onion, diced

3 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or cilantro, chopped (for garnish)

Optional: Sliced green onions and additional cheese for topping

Instructions
 

Cook the Chorizo: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chorizo, cooking until browned and crumbly, about 5-7 minutes. Use a slotted spoon to remove the chorizo, leaving the rendered fat in the pot.

    Sauté the Vegetables: In the same pot, add the diced onion and garlic. Sauté until the onion is translucent and fragrant, about 4-5 minutes.

      Add Potatoes and Broth: Stir in the diced potatoes, smoked paprika, dried oregano, and some salt and pepper. Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.

        Blend the Soup: Once the potatoes are soft, use an immersion blender to blend the soup to your desired consistency (smooth or slightly chunky). Alternatively, you can carefully ladle the soup into a blender in batches.

          Stir in Cream and Cheese: Return the pot to low heat and stir in the heavy cream and cheddar cheese until melted and well combined. Add the cooked chorizo back into the soup. Simmer for an additional 5 minutes, allowing the flavors to meld together.

            Adjust Seasoning: Taste the soup and adjust the seasoning with additional salt and pepper if necessary.

              Serve: Ladle the creamy chorizo potato soup into bowls. Garnish with chopped parsley or cilantro and top with sliced green onions and extra cheese if desired.
