Creamy Chicken Bacon Ranch Pasta

8 oz (225 g) penne pasta

2 tablespoons olive oil

1 lb (450 g) boneless, skinless chicken breasts, diced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

6 slices of bacon, chopped

3 cloves garlic, minced

1 cup (240 ml) heavy cream

1/2 cup (120 ml) chicken broth

1 packet (1 oz) ranch dressing mix

1 cup (100 g) shredded cheddar cheese

1/2 cup (50 g) grated Parmesan cheese

1 cup (150 g) cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken, garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook the Bacon: In the same skillet, add the chopped bacon and cook until crispy, approximately 4-5 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate.

        Prepare the Sauce: In the skillet with the bacon drippings, add minced garlic and sauté for about 1 minute until fragrant. Then, pour in the heavy cream and chicken broth, stirring to combine. Add the ranch dressing mix and bring to a simmer.

          Combine Ingredients: Add the cooked chicken, cooked pasta, cherry tomatoes, and half of the cheddar and Parmesan cheese to the skillet. Stir well to coat everything in the creamy sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

            Melt the Cheese: Sprinkle the remaining cheddar and Parmesan cheese on top. Cover the skillet and let it cook for an additional 2-3 minutes, allowing the cheese to melt.
