8 oz (225g) penne pasta

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 cup (240ml) low-sodium chicken broth

1 cup (240ml) heavy cream

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

4 oz (115g) fresh spinach, roughly chopped

½ cup (50g) grated Parmesan cheese

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.

        Add Cream and Seasoning: Lower the heat and stir in the heavy cream, Italian seasoning, and red pepper flakes (if using). Let it cook for about 2-3 minutes until it thickens slightly.

          Combine Ingredients: Add the cooked chicken and spinach to the skillet, stirring to combine. Let the spinach wilt for about 1-2 minutes.

            Add Pasta and Cheese: Introduce the cooked penne pasta to the skillet and mix well to coat the pasta with the creamy sauce. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency. Stir in the grated Parmesan cheese, and adjust seasoning with salt and pepper as needed.
