1 medium head of cauliflower, chopped into florets

1 medium onion, diced

2 cloves of garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free option)

2 tablespoons olive oil

1 teaspoon thyme (dried or fresh)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: pinch of nutmeg for added flavor

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 3-4 minutes until they become fragrant and translucent.

    Cook the Cauliflower: Add the chopped cauliflower florets to the pot, stirring to combine. Cook for another 5 minutes, allowing the cauliflower to slightly soften.

      Add the Broth: Pour in the vegetable broth along with the thyme. Bring to a boil, then reduce heat and let it simmer for about 15-20 minutes, until the cauliflower is fully tender.

        Blend the Soup: Remove the pot from heat. Using an immersion blender or transferring the mixture to a regular blender, blend the soup until smooth and creamy. If using a regular blender, be cautious of the hot liquid.

          Stir in Cream: Return the blended soup to the pot and stir in the heavy cream (or coconut milk). Heat the soup on low until warmed through. Season with salt, pepper, and a pinch of nutmeg if desired.

            Serve and Garnish: Ladle the creamy cauliflower soup into bowls. Garnish with freshly chopped parsley and an extra drizzle of olive oil if desired.
