1 medium head of cauliflower, chopped into florets

2 tablespoons olive oil

3 cloves garlic, minced

1 cup vegetable broth

1 cup coconut milk (or heavy cream for a richer taste)

1 tablespoon nutritional yeast (optional for a cheesy flavor)

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper, to taste

1/2 teaspoon nutmeg (freshly grated, if possible)

1 pound fettuccine pasta (or pasta of choice)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Steam the Cauliflower: In a large pot, steam the cauliflower florets over boiling water for about 10-12 minutes or until tender. Drain and set aside.

    Sauté Garlic: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 2 minutes until fragrant but not browned.

      Blend the Sauce: In a blender, combine the steamed cauliflower, sautéed garlic, vegetable broth, coconut milk, nutritional yeast, onion powder, garlic powder, salt, pepper, and nutmeg. Blend until smooth and creamy. Adjust seasonings to taste if needed.

        Cook the Pasta: While making the sauce, bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta.

          Combine Pasta and Sauce: Return the drained pasta to the pot, then pour the creamy cauliflower sauce over the pasta. Toss to combine, adding reserved pasta water a little at a time until the desired creaminess is achieved.
