12 oz rotini pasta

1 lb smoked sausage (such as andouille), sliced

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

2 cups chicken broth

1 cup shredded sharp cheddar cheese

2 tbsp Cajun seasoning

1 tsp paprika

1 tbsp olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion, red bell pepper, and garlic. Sauté for about 3-4 minutes, until the onions are translucent and the peppers are tender.

        Make the Sauce: Add the chicken broth to the skillet, scraping up any brown bits from the bottom. Bring to a simmer, then stir in the Cajun seasoning, paprika, and heavy cream. Let the sauce simmer for another 5 minutes until slightly thickened.

          Combine Everything: Add the cooked pasta and browned sausage back into the skillet. Stir in the shredded cheddar cheese until melted and cohesive. Season with salt and pepper to taste.
