Creamy Broccoli Cheddar Pasta

8 oz (about 225g) pasta (penne or rotini work great)

2 cups broccoli florets (fresh or frozen)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1¾ cups sharp cheddar cheese, grated

½ cup grated Parmesan cheese

½ teaspoon onion powder

½ teaspoon garlic powder

Salt and freshly ground black pepper to taste

¼ teaspoon crushed red pepper flakes (optional)

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Add the pasta and cook according to package instructions until al dente, about 8–10 minutes. Add the broccoli florets in the last 2 minutes of cooking. Drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, heat the olive oil. Add minced garlic and sauté for about 1–2 minutes until fragrant, being careful not to burn it.

      Prepare the Cream Sauce: Lower the heat and pour in the heavy cream. Stir to combine and let it simmer for about 2–3 minutes, allowing the cream to thicken slightly.

        Add Cheese: Gradually add the shredded cheddar cheese and grated Parmesan cheese to the skillet, stirring continuously until the cheese melts and the sauce becomes creamy.

          Season the Sauce: Sprinkle in the onion powder, garlic powder, crushed red pepper flakes (if using), and season with salt and pepper to taste.

            Combine Everything: Add the drained pasta and broccoli to the cheese sauce, tossing gently to combine all ingredients and ensure the pasta is well coated with the sauce. If the sauce is too thick, you can add a splash of pasta water to loosen it.
