Ingredients

8 oz penne pasta

1 lb chicken breast, diced

2 cups broccoli florets

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Penne: Bring a large pot of salted water to boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Sauté Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken breast. Season with salt, pepper, and Italian seasoning. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and lightly golden. Remove the chicken from the skillet and set aside.

Cook the Broccoli: In the same skillet, add the broccoli florets and garlic. Sauté for about 3-4 minutes or until the broccoli is bright green and tender-crisp.

Make the Cream Sauce: Reduce the heat to low, then pour in the heavy cream. Stir to combine with the broccoli and garlic, cooking for 2 minutes. Gradually add the grated Parmesan cheese, stirring constantly until melted and smooth. If the sauce is too thick, gradually add some reserved pasta water until the desired consistency is reached.

Combine: Add the cooked chicken and penne back into the skillet. Toss everything together to ensure the pasta and chicken are coated in the creamy sauce. Cook for an additional 1-2 minutes to heat through.

Serve: Remove from heat, garnish with fresh parsley, and serve hot. You can add extra Parmesan on top if desired.
