Creamy Beef Noodle Casserole

1 lb (450g) ground beef

12 oz (340g) egg noodles

1 can (10.5 oz) cream of mushroom soup

1 cup (240ml) sour cream

2 cups (200g) shredded cheddar cheese (divided)

1 cup (150g) frozen peas and carrots (thawed)

1 medium onion, chopped

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

      Brown the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.

        Sauté Onions and Garlic: Add the chopped onion and minced garlic to the skillet with the beef. Sauté until the onions are translucent, about 3-4 minutes.

          Mix the Casserole Filling: In a large mixing bowl, combine the cooked beef mixture, cream of mushroom soup, sour cream, Worcestershire sauce, Italian seasoning, thawed peas and carrots, and 1 cup of shredded cheddar cheese. Mix well to combine. Season with salt and pepper to taste.

            Combine with Noodles: Add the cooked egg noodles to the beef mixture. Stir until all ingredients are well blended.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

                Top with Cheese: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly on top of the casserole.

                  Bake: Cover the baking dish with foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                    Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
