2 cups fresh basil leaves, packed

1/2 cup grated Parmesan cheese, plus extra for serving

1/2 cup pine nuts (lightly toasted)

2-3 cloves garlic, minced

1/2 cup extra virgin olive oil

1/2 cup heavy cream

Salt and pepper, to taste

1 tablespoon lemon juice

Cherry tomatoes, halved (for garnish)

Fresh basil leaves (for garnish)

Instructions
 

Cook the Gnocchi: In a large pot of salted boiling water, add the potato gnocchi. Cook according to package instructions until they float to the surface, usually about 2-3 minutes. Drain and set aside.

    Make the Basil Pesto: In a food processor, combine the fresh basil leaves, grated Parmesan cheese, pine nuts, minced garlic, and a pinch of salt and pepper. Pulse until finely chopped.

      Add Olive Oil: With the food processor running, slowly drizzle in the extra virgin olive oil until the pesto is smooth and creamy. You may need to scrape down the sides occasionally. Adjust seasoning with more salt, pepper, and lemon juice to taste.
