Creamy Basil Pesto Chicken

2 large chicken breasts

1 cup fresh basil leaves, packed

1/3 cup pine nuts (toasted)

2 cloves garlic

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

1/4 cup olive oil

Salt and pepper to taste

1 tablespoon lemon juice

Optional: cherry tomatoes for garnish

Prepare the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, garlic cloves, and Parmesan cheese. Pulse until finely chopped. Drizzle in the olive oil while blending until the mixture is smooth. Add salt, pepper, and lemon juice to taste. Set aside.

    Cook the Chicken: Season the chicken breasts with salt and pepper. Heat a large skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the chicken and sear for about 6-7 minutes on each side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.

      Make the Creamy Sauce: In the same skillet, lower the heat to medium and pour in the heavy cream, stirring to combine with any leftover chicken juices. Slowly add in the prepared basil pesto and stir until well combined and creamy. Let simmer for 3-4 minutes.
