1 pound boneless, skinless chicken breasts, sliced into thin strips

8 ounces cremini or button mushrooms, sliced

4 cloves garlic, minced

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup balsamic vinegar

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cups fresh spinach

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or linguine according to the package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken breasts and season with thyme, salt, and pepper. Cook for about 6-7 minutes or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
