Creamy Baked Penne with Italian Sausage

12 oz penne pasta

1 lb Italian sausage (mild or spicy, based on preference)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 can (14.5 oz) diced tomatoes, drained

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup spinach (fresh or frozen, thawed and drained if using frozen)

Salt and pepper, to taste

Fresh basil, chopped (for garnish)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Penne: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Brown Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it into small pieces with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

        Add Aromatics: Add the diced onion and cook for an additional 3-4 minutes, until translucent. Stir in the minced garlic, oregano, and red pepper flakes (if using) and cook for 1 minute until fragrant.

          Combine Ingredients: Stir in the drained diced tomatoes and cook for another 2-3 minutes. Lower the heat and pour in the heavy cream, mixing well. Add the cooked penne, spinach, and half of the mozzarella and Parmesan cheese. Stir until everything is well combined and heated through. Season with salt and pepper to taste.

            Transfer to Baking Dish: Pour the creamy sausage and penne mixture into a greased 9x13 inch baking dish, spreading it out evenly.

              Top It Off: Sprinkle the remaining mozzarella and Parmesan cheese over the top.

                Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, until the cheese is melted and bubbly, and the top is golden brown.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh basil before serving.
