Ingredients

8 oz elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux, cooking for about 1-2 minutes until lightly golden.

Add Milk: Gradually add the whole milk to the roux while whisking continuously to prevent lumps. Cook over medium heat until the mixture thickens and bubbles, about 5-7 minutes.

Incorporate the Cheese: Reduce the heat to low. Stir in the shredded cheddar, mozzarella, and Parmesan cheeses until completely melted and smooth. Mix in the Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.

Combine Pasta and Sauce: In a large mixing bowl, combine the drained macaroni with the cheese sauce and stir until the pasta is well coated.

Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a 3-quart baking dish, then pour the mac and cheese mixture into the dish, spreading it out evenly.

Add Topping: In a small bowl, mix the panko breadcrumbs with a little melted butter, and sprinkle evenly over the macaroni and cheese.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbling.

Garnish and Serve: Allow to cool for a few minutes before garnishing with freshly chopped parsley. Serve warm and enjoy the creamy goodness!
