8 ounces elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups milk (preferably whole)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

Salt and pepper to taste

1/2 cup breadcrumbs (preferably panko)

2 tablespoons olive oil

1/4 cup grated Parmesan cheese

Optional: Chopped parsley for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add elbow macaroni and cook until al dente, usually about 6-8 minutes. Drain and set aside.

    Make the Cheese Sauce: In a large pot, melt the butter over medium heat. Once melted, whisk in the flour to form a roux, cooking for about 1-2 minutes until lightly golden, stirring constantly.

      Add Milk: Gradually pour in the milk while whisking continuously to avoid lumps. Continue to cook and stir until the mixture thickens, about 5-7 minutes.

        Season the Sauce: Stir in garlic powder, onion powder, and Dijon mustard. Add salt and pepper to taste.

          Incorporate Cheese: Remove the pot from heat. Add sharp cheddar and Gruyère cheese gradually, stirring until completely melted and smooth.

            Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce and mix until the pasta is thoroughly coated.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish. Pour the mac and cheese mixture into the dish.

                Prepare Topping: In a small bowl, combine breadcrumbs, olive oil, and Parmesan cheese. Sprinkle the breadcrumb mixture over the mac and cheese evenly.

                  Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy.
