Creamy Avocado Pasta with Lemon

2 ripe avocados, halved and pitted

8 oz pasta of choice (spaghetti, fettuccine, or gluten-free)

2 tablespoons olive oil

2 tablespoons fresh lemon juice (about 1 lemon)

Zest of 1 lemon

2 garlic cloves, minced

1/4 cup fresh basil leaves, roughly chopped

1/4 cup grated Parmesan cheese (plus extra for serving, optional)

Salt and black pepper, to taste

Cherry tomatoes, halved (for garnish)

Red pepper flakes, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water for later use, then drain the pasta.

    Prepare the Avocado Sauce: While the pasta is cooking, scoop the flesh of the avocados into a food processor. Add olive oil, fresh lemon juice, lemon zest, minced garlic, basil leaves, grated Parmesan cheese, salt, and black pepper. Blend until smooth and creamy. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

      Combine Pasta and Sauce: In a large mixing bowl or saucepan over low heat, combine the drained pasta and the avocado sauce. Gently toss to coat the pasta evenly. If needed, add more reserved pasta water to help the sauce cling better to the noodles.

        Taste and Adjust: Taste the pasta and adjust seasonings with additional salt, pepper, or lemon juice if desired.

          Serve: Plate the creamy avocado pasta, garnishing with halved cherry tomatoes, a sprinkle of extra Parmesan cheese, and a dash of red pepper flakes for spice, if desired.
