Creamy Avocado Pasta Salad

12 oz (340g) whole wheat pasta (farfalle or rotini works well)

2 ripe avocados, pitted and peeled

1/4 cup Greek yogurt (can substitute with vegan yogurt)

1/4 cup fresh lemon juice (about 2 lemons)

2 cloves garlic, minced

1 tsp Dijon mustard

1/4 cup extra virgin olive oil

Salt and black pepper to taste

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/2 cup corn (canned, drained or fresh)

1/4 cup fresh basil, chopped

Optional: Crumbled feta cheese for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Make the Creamy Dressing: In a blender or food processor, combine the ripe avocados, Greek yogurt, lemon juice, minced garlic, Dijon mustard, and olive oil. Blend until smooth and creamy. If needed, add a tablespoon of water to adjust the consistency. Season with salt and black pepper to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, chopped red onion, corn, and fresh basil. Pour the creamy avocado dressing over the pasta mixture.

        Toss and Chill: Gently toss everything together until well coated. Taste and adjust seasoning if necessary. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
