Ingredients
  

8 oz (about 2 cups) of your favorite pasta (penne or rotini work well)

2 ripe avocados, pitted and peeled

1/4 cup of Greek yogurt

1/4 cup of fresh basil leaves (plus extra for garnish)

1 clove of garlic, minced

Juice of 1 lemon

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/3 cup feta cheese, crumbled (optional)

A handful of arugula or spinach for added greens (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Avocado Dressing: In a food processor or blender, combine the ripe avocados, Greek yogurt, basil leaves, minced garlic, lemon juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, and red onion. Pour the avocado dressing over the pasta mixture and gently toss until everything is evenly coated.

        Add Optional Ingredients: If using, fold in the crumbled feta cheese and the handful of arugula or spinach. Toss gently to combine.
