2 ripe avocados

2 cups cooked pasta (spaghetti or fettuccine work best)

2 cloves garlic, minced

1/4 cup fresh basil leaves, plus extra for garnish

1/4 cup freshly grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

A pinch of red pepper flakes (optional for heat)

1/2 cup cherry tomatoes, halved (for topping)

Instructions
 

Cook the Pasta: In a large pot, cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of the pasta water before draining. Rinse under cold water to cool down, if preferred.

    Prepare the Avocado Sauce: In a blender or food processor, combine the ripe avocados, minced garlic, fresh basil leaves, Parmesan cheese, olive oil, lemon juice, salt, pepper, and red pepper flakes (if using). Blend until smooth and creamy. If your sauce is too thick, gradually add in some reserved pasta water until you reach your desired consistency.

      Combine Pasta and Sauce: In a large mixing bowl, combine the drained pasta with the creamy avocado sauce. Toss gently to coat the pasta evenly. If needed, add more pasta water to ensure the sauce clings nicely to the pasta.
