2 slices of rustic sourdough or whole grain bread

1 ripe avocado, peeled and pitted

1 cup fresh mozzarella cheese, sliced

1 medium ripe tomato, sliced

2 tbsp unsalted butter, softened

1 tbsp olive oil

1/2 tsp garlic powder

Salt and pepper, to taste

Fresh basil leaves (optional, for garnish)

Balsamic glaze (optional, for drizzling)

Instructions
 

Prepare the Avocado Mash: In a medium bowl, mash the ripe avocado with a fork until creamy. Season it with salt, pepper, and garlic powder to taste. Set aside.

    Assemble the Sandwich: Lay one slice of bread flat on a cutting board. Spread a generous layer of the avocado mash on top. Layer the fresh mozzarella slices over the avocado, followed by the tomato slices. If desired, add fresh basil leaves for extra flavor.

      Finish with Another Slice of Bread: Spread a little more avocado mash (if any is left) on the other slice of bread and place it on top of the tomatoes, avocado side down, to complete the sandwich.

        Heat the Pan: In a skillet over medium heat, combine the softened butter and olive oil. Allow the butter to melt and bubble slightly, making a flavorful base for grilling.

          Grill the Sandwich: Carefully place the assembled sandwich in the skillet. Cook for 3-4 minutes on one side until golden brown and crispy.

            Flip and Cook the Other Side: Using a spatula, flip the sandwich. Press down gently to encourage even browning. Continue to cook for another 3-4 minutes until the other side is golden and the mozzarella is melted.
