Crazy Good Casserole

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1 tsp chili powder

1 tsp cumin

½ tsp paprika

Salt and pepper to taste

1 cup sour cream

1 cup crushed tortilla chips (for topping)

Fresh cilantro (for garnish, optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Cook the meat: In a large skillet over medium heat, sauté the diced onion until translucent (about 5 minutes). Add minced garlic and cook for an additional 1 minute. Add ground beef (or turkey) and cook until browned, about 7-10 minutes. Drain excess fat if necessary.

      Combine the ingredients: Stir in the black beans, corn, diced tomatoes with green chilies, cooked rice, chili powder, cumin, paprika, and season with salt and pepper. Mix well and let it warm through for about 3-5 minutes.

        Prepare the casserole: In a large mixing bowl, combine the meat and bean mixture with half of the shredded cheese and sour cream. Mix until everything is well incorporated.

          Transfer to baking dish: Pour the mixture into a greased 9x13 inch baking dish and spread evenly.

            Top it off: Sprinkle the remaining cheese over the top, followed by an even layer of crushed tortilla chips.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, until it’s bubbly and the cheese is melted and golden.

                Serve: Remove from the oven and let it rest for about 5 minutes. Garnish with fresh cilantro if desired, then serve warm.
