2 cups all-purpose flour

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, softened

1 cup sour cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh or frozen cranberries, chopped

1/2 cup white chocolate chips

1/2 cup chopped pecans or walnuts (optional)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

      Cream Butter and Sugars: In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

        Add Wet Ingredients: Beat in the sour cream, eggs, and vanilla extract until well combined.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

            Fold in Additions: Gently fold in the chopped cranberries, white chocolate chips, and nuts (if using).

              Pour into Pan: Pour the batter into the prepared cake pan, using a spatula to spread it evenly.

                Bake: Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

                  Cool the Cake: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

                    Prepare the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk if necessary.
