Ingredients

8 large eggs

2 cups milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage or bacon

3 cups stale bread, cubed (preferably a sturdy bread like sourdough or ciabatta)

1/2 cup diced bell peppers (red and green for color)

1/2 cup diced onions

Fresh chives or parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Mix: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.

Add the Ingredients: Stir in the shredded cheddar cheese, cooked sausage or bacon, cubed bread, diced bell peppers, and onions. Make sure that all the bread cubes are well coated with the egg mixture.

Let it Soak: Allow the mixture to sit for about 10-15 minutes, giving the bread a chance to soak in the egg mixture.

Transfer to Baking Dish: Grease a 9x13 inch baking dish with cooking spray or butter, then pour the breakfast mixture evenly into the dish.

Bake the Casserole: Place the dish in the preheated oven and bake for 45-50 minutes, or until the casserole is puffed up and golden brown. You can check for doneness by inserting a knife into the center; it should come out clean.

Cool and Serve: Remove from the oven and let it cool for about 5-10 minutes. Sprinkle freshly chopped chives or parsley on top before serving.

Enjoy: Cut into squares and serve warm. This casserole pairs wonderfully with a drizzle of hot sauce or a side of fresh fruit!
