Ingredients

1 cup rolled oats

1 cup whole wheat flour

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 tsp vanilla extract

1 cup peeled and finely chopped apples (about 1 medium apple)

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup raisins or dried cranberries (optional)

Additional cinnamon sugar for sprinkling (1 tbsp sugar mixed with 1/2 tsp cinnamon)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a bowl, combine the rolled oats, whole wheat flour, baking soda, ground cinnamon, and salt. Whisk together until well blended.

Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

Add Wet Ingredients: Beat in the egg and vanilla extract until fully incorporated.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix.

Fold in Apples and Optional Ingredients: Gently fold in the chopped apples, nuts, and raisins/cranberries if using. The mixture should be thick and chunky.

Scoop the Dough: Using a cookie scoop or spoon, drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Sprinkle with Cinnamon Sugar: Lightly sprinkle the tops of the cookies with the prepared cinnamon sugar mixture for an extra touch of sweetness.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers are set.

Cool: Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Serve and Enjoy: These cookies can be enjoyed warm or stored in an airtight container for up to a week. Perfect for a cozy snack after school!
