Ingredients

1.5 lbs fresh Brussels sprouts, trimmed and halved

3 tablespoons olive oil

1/4 cup balsamic vinegar

1/4 cup pure maple syrup

2 cloves garlic, minced

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup pecans, coarsely chopped (optional)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Grated Parmesan cheese for serving (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will help caramelize the Brussels sprouts, giving them a delicious crispy texture.

Prepare the Brussels Sprouts: In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until they are evenly coated. This will help them roast beautifully.

Make the Maple Balsamic Glaze: In a separate medium bowl, whisk together the balsamic vinegar, maple syrup, minced garlic, Dijon mustard, and thyme. This sweet and tangy mixture will infuse the Brussels sprouts with incredible flavor.

Combine and Toss: Pour the maple balsamic glaze over the seasoned Brussels sprouts in the mixing bowl. Toss everything together until the sprouts are well coated in the glaze.

Roast the Brussels Sprouts: Spread the glazed Brussels sprouts in an even layer on a large baking sheet. If you're using pecans, sprinkle them over the top at this time. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the Brussels sprouts are tender and caramelized on the edges.

Serve: Once done, remove from the oven and allow to cool slightly. Plate your Brussels sprouts and, if desired, sprinkle with grated Parmesan cheese for an added savory twist. Garnish with additional fresh thyme if you like.

Enjoy: Serve these cozy maple balsamic Brussels sprouts warm as a side dish or a main attraction for any meal!
