Cozy Loaded Baked Potato Skins

4 large russet potatoes

4 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup shredded sharp cheddar cheese

1 cup cooked bacon bits (or crispy tempeh for a vegetarian option)

1 cup sour cream

½ cup green onions, chopped

½ cup diced tomatoes (optional)

¼ cup fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub potatoes under cold water to clean. Pat them dry, then prick each potato several times with a fork to allow steam to escape during baking.

      Bake the Potatoes: Rub each potato with 1 tablespoon of olive oil, and sprinkle with salt and pepper. Place the potatoes directly on the oven rack and bake for approximately 45-60 minutes, or until fork-tender.

        Cool and Cut: Once baked, remove the potatoes from the oven and let them cool slightly. Carefully slice each potato in half lengthwise and scoop out the insides, leaving about a quarter-inch of potato around the skin for sturdiness.

          Season the Potato Skins: In a medium bowl, mix the scooped potato flesh with the remaining olive oil, garlic powder, onion powder, and additional salt and pepper to taste. This mixture can be reserved for another use, such as mashed potatoes, or used as a filling for other recipes.

            Prepare for Baking Again: Place the skins, cut side up, on a baking sheet. Brush the inside of each skin lightly with olive oil, and return to the oven for about 10-15 minutes, or until they become crispy.

              Add Fillings: Take the crispy skins out of the oven and sprinkle generously with cheddar cheese and bacon bits. Return to the oven for another 5-7 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove the loaded potato skins from the oven and let them cool slightly. Top with a dollop of sour cream, chopped green onions, diced tomatoes (if using), and fresh chives.
