1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) diced tomatoes with green chilies

1 can (15 oz) corn, drained

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

4 cups beef or vegetable broth

1 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Optional toppings: shredded cheese, sour cream, avocado slices

Instructions
 

In a large pot or Dutch oven, over medium heat, brown the ground beef until cooked through. Drain excess fat if necessary.

    Add the diced onion, bell pepper, and minced garlic to the pot. Sauté for about 5 minutes, or until the vegetables are softened.

      Stir in the diced tomatoes with green chilies, corn, kidney beans, black beans, and broth. Mix well.

        Season the soup with chili powder, cumin, smoked paprika, salt, and pepper. Adjust seasoning according to your taste.

          Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes, allowing the flavors to meld together.

            Serve hot, garnished with fresh cilantro or parsley and your choice of toppings such as cheese, sour cream, or avocado slices.
