4 cups mixed greens (spinach, romaine, and arugula)

1 cup cherry tomatoes, halved

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 avocado, diced

1 bell pepper (red or yellow), diced

1/2 cup red onion, thinly sliced

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1/4 cup ranch dressing (or your favorite dressing)

Juice of 1 lime

Salt and pepper to taste

Optional: 1 cup cooked and crumbled bacon or grilled chicken
