Cottage Cheese and Veggie Bake

2 cups cottage cheese

1 medium zucchini, diced

1 bell pepper (any color), diced

1 cup spinach, roughly chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

1 tablespoon olive oil

1 egg, lightly beaten (optional for added richness)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic, diced zucchini, and bell pepper. Cook for another 5-7 minutes until slightly softened. Add the spinach and cook until wilted. Season with salt, pepper, oregano, basil, and red pepper flakes. Remove from heat.

      Prepare the Cottage Cheese Mixture: In a large mixing bowl, combine the cottage cheese, Parmesan cheese, and beaten egg (if using). Stir until well mixed. Add the sautéed vegetables and cherry tomatoes to the bowl, folding gently until everything is combined.

        Assemble the Bake: Grease a baking dish (approximately 9x9 inches) with a little olive oil or cooking spray. Pour the cottage cheese and veggie mixture into the dish, spreading it evenly. Top with shredded mozzarella cheese.

          Bake: Place the dish in the preheated oven and bake for 30-35 minutes until the cheese is golden and bubbly. The edges should be slightly crispy.
