Corn Salad with Lime Dressing

Ingredients
  

4 cups fresh corn kernels (about 4-5 ears of corn)

1 medium red bell pepper, diced

1 medium cucumber, diced

1/2 red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup crumbled feta cheese (optional)

Salt and pepper, to taste

For the Lime Dressing:

1/4 cup olive oil

1/4 cup fresh lime juice (about 2 limes)

1 teaspoon honey or agave syrup

1 teaspoon ground cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

Instructions
 

Prepare the Corn: If using fresh corn, shuck the ears and remove the kernels. You can boil them for about 3-4 minutes, then cool them down, or you can grill them for a smoky flavor. If using canned corn, drain and rinse it well.

    Make the Dressing: In a small bowl or jar, combine the olive oil, lime juice, honey (or agave), cumin, garlic powder, salt, and pepper. Whisk or shake well until the dressing is fully emulsified.

      Combine Veggies: In a large mixing bowl, add the corn, diced red bell pepper, cucumber, red onion, cherry tomatoes, and avocado. Gently toss to combine the vegetables.

        Add Dressing: Pour the lime dressing over the salad mixture. Use a spatula or large spoon to gently toss everything together until the salad is evenly coated in the dressing.

          Season to Taste: Taste your salad and adjust the seasoning with more salt, pepper, or lime juice if needed.
