8 ounces of thin egg noodles or soba noodles

1 tablespoon sesame oil

Salt, to taste

For the Chicken:

2 boneless, skinless chicken breasts

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon ginger (freshly grated or powdered)

1 tablespoon vegetable oil for cooking

For the Sauce:

3 tablespoons tahini (or sesame paste)

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 teaspoon chili oil (optional, for heat)

1 clove garlic (minced)

1 teaspoon freshly grated ginger

For Garnishing:

2 green onions, finely sliced

2 tablespoons sesame seeds (toasted for extra flavor)

Fresh cilantro or mint leaves (optional)

Instructions
 

Cook the Noodles:

    - Bring a large pot of salted water to a boil. Add the egg noodles or soba noodles and cook according to package instructions until al dente. Drain the noodles and rinse them under cold water to stop the cooking process. Toss with sesame oil to prevent sticking and set aside.

      Prepare the Chicken:
