200g ramen noodles

1 medium cucumber, julienned

1 large carrot, grated

1 red bell pepper, thinly sliced

1 cup edamame (shelled)

½ cup scallions, chopped

¼ cup sesame seeds, toasted

¼ cup fresh cilantro, chopped

¼ cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey

1 teaspoon chili paste (optional, for heat)

Salt and pepper, to taste

Instructions
 

Cook the noodles: Bring a large pot of salted water to a boil. Add the ramen noodles and cook according to package instructions until al dente. Drain and rinse under cold water until the noodles are completely cool. Drain again and set aside.

    Prepare the dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and chili paste (if using). Adjust seasoning with salt and pepper to taste.

      Combine vegetables: In a large mixing bowl, add the julienned cucumber, grated carrot, sliced red bell pepper, shelled edamame, and chopped scallions. Toss together to distribute evenly.

        Mix noodles and dressing: Add the cooled ramen noodles to the vegetable mixture. Pour the prepared dressing over the noodles and vegetables, tossing gently to combine. Ensure all ingredients are evenly coated.

          Garnish: Sprinkle the toasted sesame seeds and chopped cilantro on top of the salad for extra flavor and texture. Give it one last gentle toss.

            Chill and serve: Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes for the flavors to meld and the salad to chill. Serve cold.
