8 oz (about 225g) whole wheat penne pasta

2 cups cooked chicken breast, shredded or diced

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

1 tsp garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

    Prepare the Chicken: If you don't have pre-cooked chicken, grill or bake chicken breasts seasoned with salt, pepper, and a sprinkle of oregano until fully cooked. Allow to cool, then shred or dice.
