Cold Cucumber & Dill Sandwiches

1 medium cucumber, thinly sliced

8 oz cream cheese, softened

2 tbsp fresh dill, finely chopped

1 tbsp lemon juice

1 tsp garlic powder

Salt and freshly cracked black pepper, to taste

8 slices of whole grain bread (or your preferred type)

2 tbsp butter, softened (optional, for spreading)

Lettuce leaves for layering (optional)

Instructions
 

Mix the Spread: In a medium bowl, combine the softened cream cheese, fresh dill, lemon juice, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated and creamy.

    Prepare the Bread: If you prefer your sandwiches with a buttery taste, spread a thin layer of softened butter on one side of each slice of bread. This step is optional but adds a nice flavor.

      Assemble the Sandwiches: On the unbuttered side of four slices of bread, spread a generous layer of the cream cheese-dill mixture. Top with a layer of thin cucumber slices, evenly distributing them.
