1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup cucumber, diced

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper, to taste

4 large lettuce leaves (such as romaine or butter lettuce) for wrapping

Optional: Hot sauce or your favorite dressing for serving

Instructions
 

In a large mixing bowl, add the drained chickpeas and mash them lightly with a fork, leaving some whole for texture.

    Fold in the diced avocado, ensuring it's evenly distributed throughout the chickpeas without mashing completely.

      Add the halved cherry tomatoes, chopped red onion, diced cucumber, and fresh cilantro to the bowl.

        In a small bowl, whisk together the olive oil, lemon juice, garlic powder, cumin, salt, and pepper until well combined.

          Pour the dressing over the chickpea and avocado mixture. Gently toss everything together until well coated.

            Take a large lettuce leaf and spoon about 1/4 of the mixture into the center of the leaf.

              Fold the sides of the lettuce leaf over the filling and roll it up tightly to create a wrap. Repeat this process for the remaining wraps.

                Serve immediately with an optional drizzle of hot sauce or your favorite dressing on top to enhance the flavor.
