3 cups shredded sweetened coconut

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

2 large egg whites

1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips (for dipping, optional)

Preheat the Oven: Begin by preheating your oven to 325°F (160°C). Line a baking sheet with parchment paper to prevent sticking.

    Combine Coconut and Condensed Milk: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and almond extract (if using). Mix until the coconut is evenly coated.

      Prepare Egg Whites: In a separate bowl, beat the egg whites and salt with an electric mixer on medium speed until they form stiff peaks (this takes about 3-4 minutes).

        Fold in Egg Whites: Gently fold the beaten egg whites into the coconut mixture. Be careful not to deflate the egg whites; the goal is to keep the mixture light and airy.

          Form Macaroons: Using a tablespoon or a small cookie scoop, form small mounds of the mixture and place them onto the prepared baking sheet, spacing them about 2 inches apart.

            Bake: Bake in the preheated oven for about 20-25 minutes, or until the tops are lightly golden brown.

              Cool: Remove the baking sheet from the oven and let the macaroons cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
