1 lb large shrimp, peeled and deveined

1 cup coconut milk

2 tbsp lime juice (freshly squeezed)

Zest of 2 limes

2 tbsp honey

2 cloves garlic, minced

1 tsp ginger, grated

1/2 tsp red pepper flakes (adjust to taste)

1/4 cup fresh cilantro, chopped (plus more for garnish)

Salt and pepper, to taste

Bamboo skewers (soaked in water for 30 minutes)

Instructions
 

Marinate the Shrimp: In a large bowl, whisk together the coconut milk, lime juice, lime zest, honey, minced garlic, grated ginger, red pepper flakes, and season with salt and pepper. Add the shrimp to the bowl, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

    Prepare the Skewers: Preheat your grill to medium-high heat. Thread the marinated shrimp onto the soaked bamboo skewers (3-4 shrimp per skewer), leaving a little space between each shrimp for even cooking.

      Grill the Shrimp: Lightly oil the grill grates or use a grill pan to prevent sticking. Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque, brushing with leftover marinade halfway through for extra flavor.
